You might be wondering what bread is best, and the answer is any. But since you saved on the soup, I recommend finding a fancy sourdough and toasting it first.

Tip: Use vegetable stock for vegetarian.

If you like a chunky soup, take out half, blend the rest, and mix it back together. I like to keep some big carrot circles in there for texture.

If you don't have a blender: mash it with a potato masher. The texture is rougher but the flavour's the same.

Substitutions: swap butter for olive oil if you're that way inclined.

  1. This is my favourite soup, and has been a staple in our house for years now. Can tweak it endlessly, and really it never turns out quite the same every time we make it!
